Process: Cherry rested, fully washed, dried on raised beds
Aristides Guarnizo and his wife Cielo Esperanza own the farm Finca La Cumbre, found at the end of the road on the mountain of Rica Brisa in Tarqui. Aristides bought the 3 hectare farm in 2006 and has been working hard since then to turn it into what it is today. Each hectare has around 3000 coffee trees. Currently he is growing Variedad Colombia, Pink Bourbon and Geisha. The farm stretches from around 1800-2000masl. At this altitude and in this specific micro climate the average temperature is a little lower which allows for a slow ripening process. After picking he is leaving the cherries to mature in buckets between 12-48 hours. This Pink Bourbon lot was left for 48 hours before being washed, giving it a delicious fruity flavour with notes of berries and tropical fruits. After being washed and rinsed the coffee is left to dry on raised beds covered by shade nets. The drying normally takes between 17-22 days depending on the climate.
Anne first met Aristides and his family when visiting Yobani and Yaved at their farm Finca La Fuente back in 2016. Aristides and Yaved are brothers and their farms also happen to be next to eachother. During every visit Aristides and Cielo have always opened up their home, treated us to all kinds of delicious things and also given me lots and lots of avocados grown at the farm to bring with us back home. It is always great to visit the Guarnizos and it feels special to be able to share spectacular lots from both brothers and their neighboring farms.
